Fried Egg in an Avocado

For quick energy and a protein filled meal try this fun and easy twist on a fried egg! Instead of using toast, use a thick slice of avocado. This is the perfect dish to spice up a breakfast or brunch and can be paired with the homemade corn tortillas.

Ingredients
1 haas avocado
4 eggs
Olive oil
Sea salt and pepper

Directions
Cut the avocado in half, lengthwise. Remove the seed. Cut an inch thick piece of avocado leaving the whole in tact. If the hole from the seed is smaller than an egg yoke, cut out a little bigger hole to make room for the egg. Keep the extra avocado and fry it when the egg is cooking.

Heat a small frying pan to medium/high and drizzle with olive oil.

Place the avocado slice, with the skin on, in the pan.

Crack an egg, leaving the yoke in the middle of the avocado’s hole. Allow the egg to cook 2 minutes. Flip the egg/avocado creation, and cook to desired consistency. Repeat steps for each egg.



Remove from heat and serve. You can remove the skin of the avocado as you eat the egg.
