Recipe: Energy Health Bites

I love cookies (who doesn’t) but even better, a cookie that has some kind of nutrition in it. So the other day I experimented and came up with a cookie that is gluten-free, vegan and loaded with protein, fiber and of course the two best things in life… chocolate and peanut butter.

This little cookie is packed with protein from the nuts and oats. Oats are also a significant source of dietary fiber. The chia seeds have endless benefits: 5x more calcium then milk, more Omega 3 than flax, great source of iron and other minerals, and a low glycemic. It may seem like a lot of sugar in this recipe but if you look at most energy bars they are packed with double the sugar in a bar. So if you like to make this cookie even healthier you can cut back on the sugar or use an alternative sweetener, or use almond butter instead of peanut butter.



Ingredients
3/4 C. sugar
3/4 C. brown sugar
1 1/4 tsp. baking soda
1/4 C. melted coconut oil
2 chia eggs (6 tbsp. chia seeds and 6 tbsp. water, let sit for 5 minutes)
2 tsp. vanilla extract
1 C. peanut butter
3 C. gluten free rolled oats
1 C. chocolate chips



In a large mixing bowl combine sugar, baking soda and coconut oil. Add in chia eggs, vanilla extract and mix well. Stir in oats, peanut butter and chocolate chips. Then round dough into balls and place on greased or parchment paper lined cookie sheets. Bake at 350 for about 10 minutes.
