
Hot sticky summer days make it tough to eat; the heat seems to make everything feel heavy and unappetizing. I find that it’s best to keep meals light and fresh, subtracting out heavy parts of recipes like bread in favor for inventive items like lettuce wraps.
For myself, the theme of this summer has been moving and shaking in nature as much as possible. From daily AM surf sessions, working for various clients to nighttime mountain biking trips, I’ve been moving non-stop. I’ve come up with a foolproof, light and delicious way to slam down a healthy non-heavy sandwich- Danger style that is quick and easy to make and run.
You can use pretty much any combination of meat, cheese and toppings as you see fit for these. I do find that kale is the best wrapper as its tough enough to hold a decent amount of goodies on top of it’s leaves. If Kale is not your thing, you can try Boston lettuce.
Roast Beef, Cheddar & Kale Summer Sammies

5-6 slices of roast beef
2-3 slices of cheddar cheese
Grey Poupont Dijon mustard
Salt and pepper to taste
Step one:
Thoroughly wash and dry kale, choose pieces that are pretty wide and sturdy for your sandwich base.
Step two:
Spread mustard all along the inside of the kale spine.
Step three:
Layer cheese into the kale and nestle the roast beef on top.
Step four:
Salt and pepper to taste. Fold the kale to close the sandwich and enjoy!
